My key criteria for a weekday lunch during lockdown is quick! So apart from our leftover chilli, I will unfortunately be heavily relying on some convenience foods over the next few weeks.
Even after a year of being mostly vegan, we are still having to search for some quick vegan lunch options that the boys will eat (it is not a problem when they are at school), so I thought I would quickly share with you the usual suspects from our lunch menu just in case you too are looking for some new options:

• Vegan sausage rolls – although I am still waiting for the company to confirm if the palm oil that they use is sustainably sourced. • And of course, baked beans on toast/jacket potato.
However, my current favourite lunch option is soup. Having made my first ever soup in Veganuary last year I have since discovered how quick, easy (and surprisingly tasty) they can be. My boys really like a roasted butternut squash, carrot and red pepper soup and we have also recently discovered a really nice parsnip soup, and this beautifully coloured beetroot soup. I tend to make a big batch of it at the weekend (normally it only takes about 30-45 mins) and then I save some ready for the week and then freeze the rest.
So if you too are looking for the quickest (and probably healthiest) vegan lunch option I would say that soup is definitely the way to go. At least it is one day of the week that is not out of a packet!
