In the interests of avoiding food waste this week, I have had to find some new ways to use up the abundance of beetroot that we had received in our ODDBOX. (There is only so much soup we can eat.)
I was therefore delighted to find that this Beetroot Orzotto went down a treat with everyone (without the goats cheese), and the Beetroot and Chocolate cake that I made was so popular that this is how much of it was left by the time I managed to get a photo of it!
I had never bought fresh beetroot before however with such a long season (June to March), no packaging and some healthy and yummy recipes I will definitely be adding it to our shopping lists in the future.
