To finish National Vegetarian Week, I just wanted to share our new favourite meat-free bacon alternative.
I had kept reading about how good aubergine ‘bacon’ was however my first two attempts at making it weren’t very successful. Fortunately, I finally tried the ‘bacon’ part of this BOSH! recipe (https://www.bosh.tv/recipes/big-breakfast-bagel) and I finally saw what all the fuss was about as it is absolutely delicious (we don’t even use the garlic powder or liquid smoke).
The scrambled tofu part of the recipe (that I like) has not yet won over the rest of the family and so we simply have the aubergine bacon as a sandwich with a bit of rocket or spinach and if we get an avocado in our ODDBOX it is even more of a treat!
